Norcia is a small village in the province of Perugia, in the mountainous area of southeastern Umbria. Within its circuit of medieval walls, you’ll find precious frescoes and paintings dating back to the 16th and 17th centuries, and important churches and basilicas. The area is known for its air and scenery, and is a base for mountaineering and hiking. It is also widely known for hunting, especially of the wild boar, and for sausages and ham made from wild boar and pork, to the point that Norcia has given its name to such products: in Italian, norcineria.
 The “Nero Norcia” Black Truffle Fair is Italy’s most important black truffle event. At the fair, you will find stands selling the prized black truffle from Norcia and other culinary specialties of central Italy, such as sausages and salamis, cheeses, Castelluccio lentils, spelt, and wild berries. There will also be craft exhibitions, gastronomic events and demonstrations all centered on the theme of the truffle.
 As part of our culinary tour, you will join a professional truffle hunter and his dogs on their daily truffle hunt in the beautiful Valnerina area of Umbria and will learn to prepare truffle dishes at a cooking lesson. A second cooking class is offered where you will be creating dishes in the famous Vespasia kitchen and learning from their talented chefs.
 A day trip to Montefalco will bring you to the vineyards of one of Italy’s most important wines, Sagrantino di Montefalco. Here we will also be visiting an olive oil press and tasting the local extra virgin olive oil. Emanuela Brizi, the proprietor at the olive press is so charming and welcoming; you will soon be calling her a friend. Excursions to cheese producers, meat producers and chocolate artisans are other opportunities to taste and experience this area’ vast culinary delights.
